The wines from this estate are strongly influenced by traditional production methods, and are ambassadors for their appellations.


Most of the vines are located near the Butte des Poyeux, in the commune of Varrains.
The terroir consists largely of chalk tufa on slopes with excellent sun exposure. Trees on the top of the butte protect the vines from the north wind. Domaine des Chaumières comprises twenty small plots with soil conducive to producing fine wine.
Green pruning (severe bud thinning, leaf plucking, and bunch thinning) is done to obtain concentrated grapes (yields of 50 hl/ha). Grapes picked when fully ripe as ascertained by tasting. Traditional winemaking. Long maceration (20 days) with gentle extraction of polyphenols.
Aged for 6 to 8 months prior to bottling in galleries dug out of limestone tufa, away from light and variations in temperature.

It is best enjoyed slightly chilled (12-14°C).
Tasting notes
Beautiful crimson colour with purplish highlights. Open, attractive nose of red fruit (blackcurrant, redcurrant) and black fruit, with subtle overtones of liquorice. Well-structured, warm, and powerful on the palate with delicious fruit flavours and great balance. Spices aftertaste.
Food and wine pairings
It is best enjoyed with fish in a sauce, roast poultry, well-marbled beef, and soft-ripened cheeses.
