The vineyard is located on the property of Château des Juyons, a lovely wine estate of around twenty hectares, close to the Chapelle Heulin, in the heart of Muscadet.
Vines surround the manor house and the chapel, all dating from the 18th century, in a style typical of old houses in the Nantes region (tufa and sandstone.
The « cuvée H » is haversted on a terroir of mica schist and gneiss with 2 sorts of mica, responsible for the wine's elegant aromas, subtle minerality, and beautiful structure.
The grapes are picked on the highest potential plots. Light maceration on skins to sublimate the fruity taste and then settling of the must. Cool fermentation in temperature-controlled (20°C) to stimulate the development of aromas. Malolactic fermentation.
Maturing in casks (new oak and 2 years oak) for 12 months with regular stirring « batonnage » to enhance the fullness of the wine.
