Around the village of Puy Notre Dame, near Saumur.
The grapes for our "Excellence" cuvée are grown on clay-limestone terroir. The grapes from this five-hectare vineyard were harvested at peak ripeness.
Hand picking, gentle pressing, and cool fermentation (18°C) ensure that all the aromas are preserved. Malolactic fermentation has developed its complexity with toasty overtones. Second fermentation in bottle of a selection of the best wines, according to the Méthode Traditionnelle.
The bottles are stored horizontally on wooden laths in our tufa cellars for a minimum of 36 months before disgorging, to develop an incomparably fine bead.
Chardonnay : 80%
Cabernet franc : 10%
Chenin blanc : 10%

Tasting notes
Pale yellow colour. This Cremant has a very fine, persistent bead. A subtle and complex bouquet with intense floral notes remindful of Chenin Blanc, combined with hints of toast from the Chardonnay. Lively initial impression, evolving into velvety elegance. Smooth on the palate, with a lovely, long aftertaste featuring hints of dried fruits.
