The wine
A surprising wine by its exuberance, its aromatic intensity, and its incredible aromatic palette mixing vegetal notes (asparagus, peas), ripe fruits, exotic fruits, and notes of white truffle.
"La Passionnante" reflects the expression of an incredible terroir (clay-limestone) and little known (commune of Thurageau) where the Sauvignon Blanc grapes harvested at high maturity express themselves magnificently.
Direct pressing then settling at low temperature. Fermentation at low temperature (18°C maximum), in order to preserve the aromas. The wine is then racked and kept on fine lees for six months until preparation for bottling.
Sauvignon : 100%


Served slightly chilled (11-12°C) and decanted.
Tasting notes
Deep straw yellow colour. Incredibly intense aromatic nose, opening with vegetal notes (asparagus, peas), then revealing in turn nuances of blackcurrant and ripe mango. Delicate notes of white truffle appear on aeration. The mouth, full, oscillates between freshness and smoothness. Persistent mineral finish.
Food and wine pairings
This wine is perfect with crisp green asparagus cooked in a stew. It will also accompany seafood (mouclade), shellfish (lobster), fish (eel with sorrel), roasted pineapple with spices.
