Made from Cabernet Franc (100%), the clay-limestone terroir of Chiron in Pouancay is conducive to highly expressive viticulture.
Hand-picking and fine selection of the grapes at reception on the sorting table. Fermentation at controlled temperature (28°C) and long maceration (28 days) to extract the full potential of the grapes.
Matured in French oak barrels in our troglodytic cellars at a depth of 25m, sheltered from light and temperature variations, for 12 months before bottling.
