Story

The wine
A harvest at maturity, a gentle vinification, combined with careful maturing in our tuffeau chalk galleries, gives it freshness and finesse.
Location
The cuvée is located around the communes of Rochecorbon and Vouvray, on the plateau overlooking the Loire.
Terroir
The grapes for the "De Chanceny" cuvée come from a selection of clay-limestone soils.
Vinification
Gentle pressing and fermentation at a cool temperature (18°C) allowing good preservation of the aromas.
Second fermentation in the bottle according to the Traditional Method after selection of the best juices.
Varietals
Chenin blanc : 100%

Serving
To be enjoyed chilled (8-10°C).
Tasting notes
Light yellow colour with fine persistent bubbles. The nose is expressive, with notes of candied lemon and white fruits (peach, pear). The palate is fresh, well-balanced and evolves with finesse. Beautiful aromatic persistence on notes of dried fruits.
Food and wine pairings
To be enjoyed chilled from aperitif to dessert with cold meats, roast pork with apples, honey and cinnamon or with a chocolate fondant.
