The wine
Known for its sumptuous colours and acrobatic aerodynamics, the Demoiselle Bleue is a dragonfly that plays an important role in the ecosystem. Very sensitive to the quality of water, it proves how healthy and natural the environment is. Once threatened with extinction, it has become the symbol of a new-found biodiversity and is a protected species in the Loire Valley.
The vines are located on an early-ripening terroir in Saint-Cyr-en-Bourg, in the heart of the Saumur Champigny appellation.
Viticulture has been organic for the past several years. Clay-limestone soil, careful work in the vineyard all year round, and close following of ripening result in wonderful Cabernet Franc grapes that give this cuvée its remarkable character.
Grapes picked when fully ripe as ascertained by tasting. Traditional winemaking and long maceration (20 days) with gentle extraction of polyphenols.
Aged for 6 to 8 months prior to bottling in galleries dug out of limestone tufa, away from light and variations in temperature.

Best decanted. Served at 14°C.
Tasting notes
Deep ruby-red colour. Intense, open nose with concentrated aromas of red fruit (strawberry, cherry) and spice (black pepper). Starts out straightforward and smooth on the palate, with firm, but rich tannin. Lovely personality. Long, elegant aftertaste with delicate liquorice nuances.
Food and wine pairings
This is a treat with traditional dishes such as meat with vegetables, fish in a sauce, grilled meats (beef) and soft-ripened cheeses.
